Fiesta Beef Bowl

This delicious bowl will have you eating good ALL WEEK. This is a great prepper meal. Its simple ingredients and takes little to no time to prep.

What you will need:

2lbs ground beef

1 cup of chopped bell pepper

1 cup of chopped yellow onion

2 cups uncooked jasmine rice

3 cups water

Taco seasoning packet (I like the Siete Brand)

How:

Brown ground beef. Add taco seasoning and mix well. Add in peppers, onions, rice and water. Cover and let simmer on low to medium heat for 15-20 min, or until rice is cooked. Top with Fiesta Ranch.

Fiesta Ranch:

1 cup of plain greek yogurt OR 1 cup of blended cottage cheese

1/2-1 T Fiesta Ranch Seasoning

Mix this together and use as a topper for any dish! So so good and packed with protein.
