Superhero Muffins

These muffins will have you feeling like a Superhero lemme tell you! I love these muffins paired with my protein coffee in the mornings. They are a great source of healthy fiber, fats and protein. It gives you a great amount of fuel to start your day.

What you will need:

DRY:

1 cup almond flour

1 cup oats

2 scoops Level-1 protein of choice (I LOVE pumpkin spice latte)

1 tsp baking soda

1/2 tsp salt

2 tsp cinnamon

1/2 cup walnuts

1/2 cup chocolate chips

WET:

3 eggs beaten

1 can pumpkin puree

1/4 cup honey or pure maple syrup

6 T butter melted

1 tsp vanilla extract

How:

Preheat oven to 350*. Mix dry ingredients together in a bowl. In a separate bowl mix together we ingredients. Pour wet ingredients into dry ingredients and mix well. Grease muffin tins and pour mixture into muffin tins, about 2/3 full. Bake for 25-30 min or until the toothpick test comes out clean. Spread some extra grassfed butter on top or some peanut butter and WOW! So good.
